1 whole chicken
totilla chips
large can of cream of chicken soup
cheddar cheese
Onions ( if you want)
green chili ( can be set on the table in case there are kids)
I get the best results with the chicken in a pressure cooker. Rinse chicken ( don't forget to take the giblets out.........its not PRE- stuffing......LOL)
Pam the pressure cooker, place chicken in & salt and pepper to taste, put about a cup of water and pressure up......cook 20 minutes) when cooker has lost pressure ( I put the cooker in the sink that has a bit of cold water to speed up the process) take chicken out and put on a plate to cool enough to pick the chicken off the bones.......set aside....leave the juices in the cooker and add cream of chicken soup....mix with chicken juices( you can add a bit of water.
Pam a 13x9 cake pan.
Put enough chicken soup mixture to cover bottom, cover that with tortilla chips,layer some chicken, then cheese, onions (optional), and green chili. make 2 or 3 layers of soup mix and the other ingredients. Whether I am putting the chili in or not I use a little garlic salt as I layer. Layer till ya get almost to the top of the pan, pour the rest of the soup mix over the top,then cover with cheese. Bake, covered ( foil) at 400 degrees for 30 to 45 minutes. It's delicious!

sounds like a much easier version of chicken enchiladas..
ever since i lived in ABQ i am a HUGE fan of green chiles... oh for a nice big bag of freshly roasted green chiles...:0( ones lucky to get canned...

HI ~r ( by the way how does one get that sqiggly line above a letter.....it's hard to write manana....the way it's supposed to be........LOL with that sqiggly line ABOVE the first n)
It won't be long before there are chili roasters all over the place in Albuquerque. The stores in my little town here ( east of the mountains) have roasters and do out back of the store. I would gladly throw you a bag of freshly roasted chili............if I could throw that far......where DO you live, anyway!!!!! Oh, and the chili crop this year is a good one.......chile hates too much rain and it sure has gotten it's way this season.............LOL It may be dry, but we are going to have some really fat chili this year!!!!!!!!!!! HOT, TOO!!!!!!! LOL

in ohio............................ for the last 2 years. grew up in KS and had that one glorious year in ABQ... oh here is my turkey condiment recipe:
4 oz orange marmalade
1 can cranberry sauce(whatever is your preference jellied or whole)
at least 4 oc green chiles.... mix together let blend for several hours serve with chicken or turkey...
it's yummy
then my latest chicken salad that people die for...
chop up cooked chicken breast
add i c pecans or walnuts
1 bag dried cranberries
4 oz of green chilies
mayonaise to whet
this also needs to chill and blend together
tastes wonderful on Hawaiian buns..
I rarely measure thus you reallly need to be a cook to follow my directions:0)

OOOOo, raine, thanks for that chicken salad recipe, that sounds really good. I'm going to try that out!!!!!!!! I'll let you know what these desert rats here think................LOL
